2 cups almond flour
1/4 teaspoon sea salt
1/2 teaspoon baking soda
1/2 cup melted coconut oil
1/4 cup honey
2 teaspoons cinnamon
1/2 cup unsweetened coconut
1/2 cup raw (not roasted) pumpkin seeds
1/2 cup raw (not roasted) sunflower seeds
1/2 cup chopped walnuts or pecans
Preheat oven to 325 degrees.
Mix flour with salt, cinnamon and baking soda. In a mixing bowl combine coconut oil and honey. Stir in almond flour mixture and stir well. Add seeds, almonds, walnuts and coconut stirring to combine. If too dry add more coconut oil.
Grease a Pyrex 8×8 baking dish with coconut oil. Spoon batter into pan and press it down using the back of your hand or knuckles. Cook for 20 minutes or until done. Let cool before cutting. Keep refrigerated.
