2 large whole beets
2 tablespoons coconut oil, melted
kosher sea salt
fresh ground pepper
Preheat oven to 400. Cut off ends and peel beets. Chop into rounds then cut into small cubes. I think the smaller the better, for quickness of cooking and taste (the smaller size diffuses the density and sweetness of the beet). Place in a baking dish and toss with oil, salt, pepper and lemon juice. Cook in preheated oven for 15-30 minutes depending on size of beets.
Serve with fish or put on top of salads.
