Combine the almond flour, baking powder, and salt in a bowl, stirring to mix. Add eggs, vanilla, and honey. Whisk until smooth. If batter is too runny, add more almond flour. If it is too thick add water one tablespoon at a time.
Heat a non stick frying pan over medium heat. Add coconut oil and let it melt, swirling it around to evenly coat the pan. Spoon batter in to pan to make pancakes. Cook for 3-5 minutes or until pancake has formed before flipping. Add more oil to the pan as needed. Top with fresh berries and/or melted honey or maple syrup. Can also be made into waffles with a waffle maker 🙂
