Preheat oven to 300 degrees. Place nuts, sunflower seeds, coconut, cinnamon and salt in a large bowl and mix. Melt coconut oil in a small saucepan over medium high heat – measuring after the oil has melted and pouring out any extra or adding more if needed. Add half cup of honey and heat for a few more minutes stirring honey and coconut oil together.
Pour honey mixture over nut mixture and stir well to evenly coat the nuts with the oil mixture. Place on a baking sheet lined with parchment paper or a silicone liner. Bake for 30 minutes stirring frequently to avoid burning.
Take out of oven and let cool before transferring to an airtight container for storage. Place half a cup of granola in a bowl and pour one cup of coconut milk or almond milk over top. Eat with a spoon – YUM!
