3 handfuls of fresh spinach (or 1 bag frozen)
1 clove garlic
½ pint grape tomatoes (the sweet ones…)
1-2 Tablespoons light olive oil
sea salt and fresh pepper
Wash and dry spinach. Rinse tomatoes under cold water. Chop garlic as fine as you like it.
Over medium high heat, heat oil in a frying pan large enough to hold all the spinach. Then add the tomatoes and toss in the pan for a few minutes until they start to soften. Add garlic and spinach and sautee for a minute or two until it wilts – if using frozen until it gets warm.
YUM! Serve with eggs or chicken for lunch or dinner….SO EASY!
