2 Pounds Ground Turkey (preferably organic)
1 cup bread crumbs or almond flour (or other gluten free flour)
½ medium white onion, chopped
2 cloves garlic, minced
¼ teaspoon thyme
¼ teaspoon rosemary
2 Tablespoons tomato paste
2 Tablespoons olive oil
¼ teaspoon sea salt
Fresh ground pepper
Heat olive oil in a sauté pan over medium heat. Add onion and cook for 2-3 minutes. Add garlic. Cook 2 more minutes. Turn off heat and add thyme, rosemary, tomato paste, salt and pepper. Let cool.
Place turkey in a large bowl. Crack eggs into a small bowl and whisk them. Add to turkey and stir. Add bread crumbs or almond flour and combine. Add onion mixture and gently stir. Form mixture into a loaf in a 9×13 baking dish. Bake for 45 minutes at 375 degrees.
Serve with sautéed spinach or on top of on any salad.
