1 can (14-16oz) kidney beans, drained and rinsed well
1 can (14-16 oz) chick peas, drained and rinsed well
1 can (14-16oz) white navy beans, drained and rinsed well
1 can yellow wax beans, drained
1 large (about 10oz) bag frozen cut green beans, thawed
1 small red onion
1 tablespoon white wine vinegar
3 tablespoons extra virgin olive oil
sea salt and fesh ground pepper
In a large bowl combine all the beans. Thinly slice or chop the onion and add to the beans. Pour vinegar and oil over top and toss gently to combine. Season with salt and pepper as needed.
Serves 6 as a main course
If want to cut recipe in half, simply use just one can of kidney beans and one can of chick peas (no navy beans). Sometimes there are smaller size cans of chick peas available at the store. OR you can save the remaining beans and add to salads or eat with grilled veggies.
